The TMS Perspex knife edge is ideal for performing low force tests on soft foods such as nougat and mallow in order to assess their shear properties.
The "V" shaped probe edge compresses onto the sample before shearing through it to measure its cross-sectional properties. The blade width is 60 mm (2.4 in).
A Perspex blade is suitable for tests where it is important not to alter the temperature of the sample, for example, butter, in order to obtain accurate, reproducible results.
This fixture is also included in the recommended general probe kit and the mini‑vice and 3‑point bend assembly.
